Sinks are the least used kitchen equipment, and hence are what you need the least of. I've had more success improving my food supply by adding fridges than cookers and sinks. Once the map is full it's just a case of deleting the starter wing I built and building on the land to fit in with the rest of the prison.
Once the cash is rolling in I'll usually goo for the planning tool and design every square inch over and build the prison as the cash flows. A hungry prisoner is a very unhappy prisoner.
